you have to check out some of roberta flack's covers. i think she does a couple of dillon covers, and like her leonard cohen one (suzanne) she absolutely kills it.
I'm excited to hear this version of Moonshiner. Cat Power does a nice, dirge-like one.

You mention the Taj Mahal cover. That is on a Contemporary Blues Compilation of Bob Dylan covers which also includes an absolutely amazing rendition of Don't Think Twice, Its Alright by Susan Tedeschi. I can not ever get enough of it. Very chilling. I definitely recommend it.
Thanks for the Roberta Flack and Susan Tedeschi suggestions. Susan's husband, Derek Trucks, does a pretty good version of Down in the Flood, but I thought the Flatt and Scruggs bluegrass version went better with this mix.
I agree about Susan Tedeschi's cover of Don't Think Twice, It's Alright" being one of the best Dylan covers out there. Be sure you listen to one that includes the guitar solo by her husband Derek Trucks (beautiful). I am surprised it was not mentioned in the list. I agree with all your choices - great Dylan covers.
